Cashew Kernel Oil

Cashew Kernel Oil (CKO) is a cooking oil made from cashew nuts. The tropical nut is first shelled and dried; the shell is removed and the kernel is hydraulically pressed to release the oil.

Cashew oil is considered a very good quality cooking oil — healthier than many other cooking oils. Because extraction is largely manual and time-consuming, it is a premium product.

Process

How cashew kernel oil is made

Cashew oil extracted from cashew kernels has an oil ratio of around 11.8%, with a light-yellow colour. Extraction is largely manual and time-consuming, which makes the oil a premium product.

Raw cashews are first separated from the cashew apple, then cooked and roasted to reduce the volatile, toxic shell oil. After the rough shell is removed, the kernels are roasted again to dry the surrounding silk skin, which is then rubbed off. Finally, the kernels are crushed and hydraulically pressed to release the oil.
